At six in the morning, the lights come on in the workshop of the Radics family in Debrecen. First, the wood-burning oven is heated, it takes an hour and a half to warm up. The oven will get to it later. The dough has rested overnight, it is kneaded once more, and then they start: stretching, shaping, baking, decorating, wrapping. December is the time for baking gingerbread, at least in home kitchens. The workshop of a professional gingerbread maker is busy not only during the Advent period. Of course, Christmas is also a special time for them.
